Justin is best know as the man behind the flavours of Bécasse, his restaurant he owned and operated with his wife Georgia which received critical and public acclaim and was named Best New Restaurant in 2002 and Best European Restaurant in Australia 2004 by the Restaurant and Catering Association.
Working with Justin on a book was great fun, he loves his rugby and I can’t get enough of his food which fuses fine French cooking techniques with modern Australian style and ingredients.
