The Whole Fish

Josh Niland is serious about what he does. His restaurant Saint Peter has received widespread critical acclaim because Josh is serious about pushing the boundaries of seafood and because he is serious about utilising every part of the fish in his cooking and wasting nothing.

I loved working with Josh because he’s focussed and knows exactly what he wants. Even though the likes of Jamie Oliver and Nigella Lawson have all labelled Josh one of the the most amazing chefs of his time and everyone wants a piece of him, none of this seems to interest him (maybe it does but he sure doesn’t show it!) as much as pursuing creativity and perfection within his food.

The Whole Fish won many awards around the world, even being the first Australian book to ever take out the top honours of ‘Book of the Year’ at the James Beard Awards.
